Among the absinths of the 19th century, there were the Greens coloured by plant maceration, in the provincial tradition (the recipe of Versinthe); Whites were the result of the Swiss distillation method, although this technique has since been improved upon.

DEFINITION
La Blanche de Versinthe is 57 percent alcohol. It was created and distilled with star anise. As with the 19th century absinths, there is no sugar added.

WHY LA BLANCHE ?
For lovers of absinthe
While making Versinthe, Pascal Rolland asked his herbalist, Marc Villaceque what the results would be if the maceration were redistilled. Since the stills were on, the two co-workers decided to distil 5 litres of marinating plants of Versinthe with the small copper still used for tests. Two hours later, they tasted the impressive results. The decision was made and the Blanche was created without any changes at all. It was a very happy day for Absinthe lovers.
Development

Versinthe is made by the maceration of over 20 plants of the large absinth variety. The maceration process consists of the slow infusion in alcohol of the plants in order to extract all their flavours.

For La Blanche, the same maceration plants are used in distillation at stills of the “Liquoristerie of Provence” in order to refine them. These stills create a vacuum and are heated in double layers with vapour under pressure. This distillation technique, used in perfume factories, allows distillation at 50 degrees C, against 90 degrees atmospheric pressure. Also, the aromas are not burned and the alcohol is obtained while keeping the exceptional aromatic qualities. The Blanche is four times more concentrated in Absinth than Versinthe.

EXCLUSIVE PRODUCTION
With Versinthe and La Blanche, “Liquoristerie of Provence” is the only producer who proposes the 2 big types of absinthes which existed in the XIX th century. La Blanche is a product absolutely to discover for all the
